I love making lamb, it's so easy. The trick is to get rid of all of the fat on the outside, Salt & Pepper, then cook it to 140. My mom used to always have lamb for Easter and it was one of my favorite things. I usually get a taste for it in March but all I can usually find is a leg, with lots of fat for $9 - $10 a pound.
