New Year's Resolutions 2019

My New Year's resolutions are either something I do every day or something that is totally hopeless and so I don't feel too bad if I don't get it done. Each resolution has to be measurable. That means you have to be able to say "Yes I did it." or "no I didn't get that done." So you can't say stupid stuff like "Be A better person" How would you know? Or "lose weight" .. lose it from when and how long? You have to say get to 200 lbs, (that would be me), or Read stories to my kids 3 nights a week…

Here's my list for 2019:

1. Eat French Fries at every place that has French fries to discover the best French Fries in Memphis… (The best french fries in the known universe are at Bistro Jeanty in Yountville California.. if you ever go there..)

2. Fly a jet airplane 500 miles (I've flown a small prop plane about 300 miles) I have a need, a need for speed.. There's got to be a FedEx pilot out there some place that will let me fly his plane.

3. Learn French so I can talk like the Indian who's the bad guy in "The last of the Mohicans" .. I put this in last year. So far, nothing. Can't even read French menus yet..

4. Publish My "God is like that" book. And it becomes a New York Times best seller, and they make a movie, and Harrison Ford plays me, and I get rich, and have a summer home in Yountville so I can fly there in my jet and eat French fries every day..

5. Put 10,000 miles on my motorcycles..

6. Get down to 200 lbs so I'm svelte and look cool in skinny jeans!... Just kidding.. Hope I didn't hurt your brain.

7. Learn to cook perfect Risotto in a pressure cooker so I can have it for Breakfast every day with 2 fried eggs on top … Who needs Skinny jeans..

8. Sleep past 8am just once.. Never happen!

9. Play Free Bird on an electric Guitar (never played one) ..

10.  Water Ski behind a tug boat on the Mississippi ( I just threw that in because I couldn't think of anything else) ..

God's like that: He has so many plans for you.. You Have no Idea!! The people he wants you to meet. The places he wants you to see. The things he needs you to say. The hugs he wants you to give. He put you here to change lives. Get ready, he's got a long list..

If I put French Lessons on my phone and a cup holder on my Motor Cycle to hold fries while I rode to the Guitar lesson place I could do 4 at a the same time … I'm as free as a bird now and this bird you cannot change .. Wonder how you say that in French?


Cooking 220 - 2 pans, 2 burners, 20 minutes:

In the south you have to eat Black-eyed peas on New Year's day for Good luck .. So here's an easy one .. It's a dip/side dish .. It's pickled Black-eyed peas … This is from the Lee Brother's Southern Cookbook

Field Caviar

4 cups of water

2 3/4 cups black-eyed peas (Fresh, or canned (1 - 14 oz can).. make it easy .. about 1 lb) (The recipe in the book calls for Crowder peas, but this is New Years so I changed it..)

2 tsp salt

3 tbsp red wine vinegar

4 tbsp olive oil

1/2 tsp sugar

1 tsp Dijon Mustard

1/2 tsp black pepper

3/4 cup finely chopped red onion (1 medium onion)

1 cup chopped flat leaf parsley (not the curley leaf stuff like bad restaurants put on the side of your plate or Cilantro .. ) about 1/2 bunch

For the peas:
Bring the water to a boil, add 1 tsp salt, then the peas. Cook at a high simmer until the peas are tender but still toothsome (about 10 min). Drain and rinse them in a colander under cold tap water. Let cool completely.

For the dressing:
In a bowl (big enough to hold all of the peas, onions and parsley) whisk together the vinegar, mustard, oil, sugar, 1 tsp salt, and pepper until it is emulsified  (looks like a thick salad dressing, oil is not apparent)..

Add the peas, onion, and parsley and mix… .

Taste! Taste! Taste! .. Does it need more salt? Sugar? Vinegar? Mustard? Pepper? … maybe a little Tabasco…  If it's right, it will be hard to keep from tasting it again. If you just have to have one more taste, you're done.

Serve with chips or crackers or as a side… Here's the cool thing: You can do this with any canned peas or beans.. Pinto beans,  Black Beans, field peas, Crowder peas, or a mixture of all …etc  .. think Super Bowl party..


How about saving a kid's life!!

When you give Platelets it's like giving St Jude $700 - $1000. If we don't give them, they have to buy them.

Giving Platelets is like giving blood, it just takes longer (1 1/2 hours) and you get all of your blood back (so you can do it every week if you want) . I know it's a long trip to go all the way down to St Jude, but you may be saving a kid's life . plus you get to watch a movie while you're there. Call Kim at 901.595.2024 and she'll setup an appointment and treat you like family. Just tell her you're from Hope.

Directions: From Poplar, turn north on Third Street, then right on Lauderdale/Jackson Ave (first right after you go under the expressway). Enter through the north guard gate (you'll see the Danny Thomas Pavilion. Gold top).

Tell the guard at the gate that you are here to donate blood. The guard will instruct you where to park. You will then enter the hospital by the red side door closest to the blood donor parking lot. The Blood Donor Center is in the southwest corner of the hospital on the ground floor.

Appointment times are generally available Monday through Friday from 8:00am to 4:00pm. Except on Tuesdays they start at 9:15am.
