It's the terminator stupid!!!!!!!

For some reason I have nothing but right-footed socks. All of my socks have a hole so that if I put one on my left foot my big toe sticks out of the hole. It makes me crazy, I hate when my big toe sticks out of my sock. It's not that I walk funny or anything, I'm just aware of all day long.  The same sock on my right foot just has a hole over the top of my smaller toes, but nothing sticks out, I can live with that. I think I have "Extended Toe syndrome" (I just made that up, don't go look it up on WebMD). It's like people who grind their teeth, they don't really know it, they just do it. My left big toe sticks up and rubs a hole in every sock I've got. I've tried Preparation-H and Udder Balm and duct tape, I'm not sure why but those things seem to fix everything. Nothing worked. My wife keeps buying me new socks, but they all turn right-footed before too long. Makes you wonder why I'm not walking around in circles. I wonder if they make Kevlar socks?

A long time ago I worked for a place that had a big computer with a bunch of big SCSI hard drives. These are just normal hard drives like you've got in your computer at home except they're real fast and real big (at least they were at the time.) and you can string a bunch of them together.  So one Saturday I was replacing several of our old hard drives with new ones, no big deal, anybody could do it, should have taken about 45 min at most. 4 hours later I still didn't have it working. I had tried every combination I could think of and I couldn't make it work. I was leaving something out?? … I figured I was just brain dead and needed to do something else for a while, I had till Monday morning to get it done. So I went home. While I was driving I said "God it sure would be nice if you would just give me a hint at how to fix this thing, It wouldn't hurt my feelings a bit" …. No sparks, no voice from the clouds, just went home. I got home and got Macky, my son, and started looking for something to watch on TV. Terminator was on, one of my favorite movies. So Arnold is tearing stuff up and shooting everything in sight and Sarah Connor (Main Character in the movie) keeps yelling "It's the Terminator".  And finally after about an hour I get it: It's the Terminator ….. on all SCSI hard drives there was a little metal thing that looks like a flat spider covered in plastic. The last drive in the string has to have it plugged in to tell the computer it's last, otherwise nothing works. This little thing is called a TERMINATOR…. It's the terminator stupid!!!!!!! .... went back to work, 5min, all done.  

God's like that: We think he only shows up at church or when something really bad happens and that he only speaks through the Bible or Billy Graham. But he's not limited, we just think he is. He's there all the time and talks through all kinds of things and people, we're just not listening. Maybe we need a right-footed sock to be aware that he's so close.

I wonder if I should just buy some Flip Flops. Then if my big toe sticks out everybody would think it was natural. Flip Flops with socks are very stylish.


Cooking 220 - 2 pans, 2 burners, 20 minutes:

Frittata = Omelets for dummies … This is so easy and perfect for quick dinner. It's almost breakfast-for-dinner. But healthy. You can add anything to this, bell peppers, onions, celery, carrots, apples, dried figs, raisins… etc. And any herbs or spices you like … this is wide open. IF you don't like feta, use any other kind of cheese or leave it out. There are no rules on Frittata's …

1 tablespoons butter (Butter is ok, you won't die..)

2 scallions including green tops, cut into thin slices

10 ounces spinach leaves (get pre-washed in the tub)
1 1/2 teaspoons dried tarragon, or 1 1/2 tablespoons chopped fresh tarragon

Salt & Pepper

8 large eggs

2 tablespoon olive oil

3 ounces feta, crumbled (about 1/3 cup)

Get your iron skillet out.

Heat 1 tablespoon of oil over moderate heat.

Add the scallions ( and whatever else you want to add.. onions, bell peppers …etc) and cook, stirring, for 2 minute.

Add the spinach, dried tarragon (any other herbs) and salt and pepper.

Cook, stirring frequently, until the liquid evaporates, about 3 minutes. Should smell great!!!

Remove the spinach mixture and let cool. Wipe out the pan.

In a large bowl, beat the eggs with salt and pepper.

Stir in the spinach mixture.

Heat the broiler.

In the same iron skillet, melt the 1 tablespoon butter with 1 tablespoon of oil over moderate heat. The oil keeps the butter from burning.

Pour in the egg mixture and reduce the heat to low.

Sprinkle the feta over the top and cook until the bottom is golden brown and the top is almost set, 6 to 7 minutes.  Don't stir it . This is supposed to come out looking kinda like a pie, not scrambled eggs.

Put the whole thing under the broiler, about 6 inches from the heat, if possible, until the eggs are set and brown on top, 2 to 3 minutes.

To serve: Lift up the edge of the frittata with a spatula and slide the frittata onto a plate. OR if you have a large cutting board.. run a knife/ spatula around the edge to be sure it's mostly free. Then flip the whole thing upside down and slam it on the cutting board…. IT's lots more fun and really pretty on the bottom … I like slamming things, another reason to have an iron skillet …

Cut into wedges and serve. Tabasco & Jelly on the side makes great sauce.. Not kidding.. Tbsp of jelly with some Tabasco on top… very nice!

If you want this to be a really big meal add filler, like my mom would do. That would mean adding cooked pasta, cooked rice, sliced bread, cooked potatoes, cooked sweet potatoes… Add it to the eggs after you put them in the skillet and smooth it out.. Do everything else the same.


How about saving a kid's life!!

When you give Platelets it's like giving St Jude $700 - $1000. If we don't give them, they have to buy them.

Giving Platelets is like giving blood, it just takes longer (1 1/2 hours) and you get all of your blood back (so you can do it every week if you want) . I know it's a long trip to go all the way down to St Jude, but you may be saving a kid's life . plus you get to watch a movie while you're there. Call Kim at 901.595.2024 and she'll setup an appointment and treat you like family. Just tell her you're from Hope.

Directions: From Poplar, turn north on Third Street, then right on Lauderdale/Jackson Ave (first right after you go under the expressway). Enter through the north guard gate (you'll see the Danny Thomas Pavilion. Gold top).

Tell the guard at the gate that you are here to donate blood. The guard will instruct you where to park. You will then enter the hospital by the red side door closest to the blood donor parking lot. The Blood Donor Center is in the southwest corner of the hospital on the ground floor.

Appointment times are generally available Monday through Friday from 8:00am to 4:00pm. Except on Tuesdays they start at 9:15am.
