Groundhog Day

If you didn't notice, last Tuesday was Groundhog Day, and Punxsutawney Phil got scared or didn't? So, 6 more weeks of winter or not? Is that winter like last week when it was 72 and sunny or winter like week before when it was 10 and snow? I don't think Phil knows, I think he's just a chicken. The good thing about Groundhog day is that they always show the movie "Groundhog Day" with Bill Murray. If you've never seen it, Bill Murray is a TV weather man who goes to cover Punxsutawney Phil for a local News station. He gets there, has a bad day, goes to bed, wakes up the next morning and its Groundhog day, again. He repeats Groundhog day over and over every morning. After a few days of this he knows exactly what's going to happen, and what everybody is going to say. Then he decides to start doing things differently to see if anything changes, and it does. He learns how to play the piano, learns everybody's name in town, and stops bad things from happening. But the next morning it starts all over again….  I was thinking Today is like the day after Groundhog Day, the first day that would repeat if you were Bill Murray in the movie…. What would you do different? …  When I was a kid playing street football we called it a "Do Over". If there was a foul or a disagreement or a car got in the way, it was a "Do Over". We played by the rules, but most football fields didn't have cars parked on the 40 yard line. Wouldn't it be great if you could call "Do Over" on everything?  Like if you said something you wish you hadn't.. "Do Over!" Or if you pulled out in front of a car because you were in a hurry… "Oooooops Do Over!" … Or if you missed your kid's ball game because you had something more important to do.."Do Over!" … Or if you ate that 3rd burrito and started wondering where that was going… "Do Over!" …. Or if you kissed that special someone who turned out to not be so special.. "Do Over!!" ….. So Today is "Do Over day!" ..Yeaaaaaaaa!..  Do all the things you wish you had done yesterday or ask forgiveness for something you did yesterday and start over …. All scores are zero.. IT'S DO OVER DAY!!!!!!!!!  …

God's like that: To God every day is "Do Over Day". It's never too late to ask for forgiveness, never too late to ask for help, never too late to start new ….

When you go to lunch tell them you want the "Do Over Day Special" Re-fried beans, Twice baked potato, Chicken fried Groundhog… Yummmmmmm! …. Don't screw up because tomorrow is just Wednesday…..

Cooking 220 - 2 pans, 2 burners, 20 minutes:

Coconut rice is a great, simple, elegant, refined dish that is also street food. You can eat it with your fingers right out of the pan or put it in a small ring mold and top it with sea urchin and shrimp and serve it at any restaurant in the world. It could be desert every day. The trick is to keep it subtle, not too much salt, not too much sugar. The way you can tell if you have made it right is if you just have to have one more bite, about 14 times …

Coconut rice:

1 1 / 2 Cups of Jasmine Rice

1 can (14 oz) unsweetened coconut milk - (not cream of coconut or sweetened) Buy the best. Most grocery stores have it and all Asian markets have it …

1 / 4 cup of water

2 Tbsp Sugar

Pinch of salt (1 / 8 of a Tsp)

Wash the rice: put it in a big measuring cup and fill the cup with cold water. Swish it around and pour the water out, keep the rice in. The water will be cloudy. Wash the rice several times until the water is clear. This will make your rice very white and clean tasting..

Coconut milk is weird because it separates in the can. When you open it you will find one end with solid white/ gray cream and the other end with a watery, milky liquid and it smells like floor polish. Don't worry, that's the way it supposed to be. It turns out some recipes call for the solid stuff and some call for the watery stuff and some call for both… this one needs both.. If your coconut milk is not like this, check the can, it may be coconut cream or something else….

Put the coconut milk, water, sugar, and salt in a sauce pan that has a cover. Heat and stir until the sugar is dissolved, you can feel the crystals and see them in your spoon if it's not dissolved.

Add the rice and stir to mix it up. Bring it to a boil..

Cover and put it on the lowest setting on the smallest burner on your stove. If you don't have a small burner, you can use a skillet to reduce the heat. Just put the skillet on the burner and put the pan in the skillet. You want it to just barely simmer for 18 minutes … check it and taste it and stir it at 15 minutes, try to rub off any white stuff stuck to the bottom… Do it again at 18 minutes … If there is no more liquid, it's ready.. take it off the heat and let it stand covered for 8 - 10 minutes (you can go as long as 30 minutes)…

Practice this a few times… feel free to put anything on top, steamed veggies, pan fried fish, fruit, ……next week we'll make something to put on it… Then we're going to take rice to a whole new level…Hummmmmm?
