The definition of insanity. Let's try it one more time.

I was sitting in my office one day when I heard a little pop and my chair went back about an inch. I didn't really think anything about it, if it was only going to go an inch, who cares?  So I was sitting there talking to somebody and back I went, flipped straight back, feet in the air, actually landed on my knees, a full 180, looked like the Marx Brothers. The guy I was talking to helped me back up. I looked at the chair, looked OK, maybe I was just off balance? Sat down again, leaned back, boom back on the floor OK, OK, I guess I've got to get it fixed, I just won't lean back. I'll sit on the front edge. I sat there for a while, then somebody asked me something, leaned back a little, boom  It was like a trick chair, lean back just past a certain point, and somebody jerks it out from under you. I was thinking about taking it around the office "Hey come here! .. Sit in that chair!"... Boom!  I could have done it to everybody, but I just did it to me!! 3 days and 15 backflips later I still had the chair. My knees were sore, my hands hurt from catching myself, and I was starting to get a chair phobia. Every time I flipped back, I was amazed that it was still there. Then I sat back down in it. I don't know what I expected to happen, maybe the chair fairy would come fix it, or just take it and leave a $10 bill lying on the floor. Finally, somebody TOOK it from me went and got another chair. how hard was that? I should have let them have it the first time I flipped.

God's like that: He's standing there ready take it, to get us past that stupid thing we keep doing. But we just keep going back to it. Won't give it up! I guess we like feeling stupid. What we need to do is let him have it  God's way will be different, but much better. And you won't have to keep getting up off the floor.  

I wonder if I can sell that chair at a joke store? I've still got it.  Maybe it's different now?  Ya Think?.

Cooking 220 - 2 pans, 2 burners, 20 minutes:

Mediterranean Diet:  
(This is Keto too.. Trade the corn for another veg if you want)

We don't usually poach things here, but this is too easy. 1 iron skillet, 1 burner and super healthy .. and super great .. This is also very elegant.
This could be a candlelight dinner for 2 or a camping trip. Even you can make this!!!!!

Poached Salmon with Corn and White Wine-Butter Sauce (((Don't worry about the wine. We can substitute water)))

4 medium zucchini (1 1/2 pounds), coarsely shredded (((use a grater, potato peeler, or just chop it up don't make a big deal out of this)))

Salt

2 tablespoons extra-virgin olive oil

3 medium shallots-2 finely chopped, 1 halved (((You could also use 1 sweet onion, just don't want a strong taste)))

Freshly ground pepper

2 3/4 cups dry white wine (((Or water)))

1 cup fresh corn kernels (((or frozen corn.. canned corn is ok too))) (Keto: Tomato, or cauliflower..etc)

2 lemon thyme sprigs (((or regular thyme)))

1 bay leaf (((optional)))

Four 6-ounce skinless salmon fillets

1 stick cold unsalted butter, cut into tablespoons slices

1/4 cup thinly sliced basil leaves


1.Set a colander over a bowl. Add the zucchini to the colander and toss with 1 teaspoon of salt. Let stand for 20 minutes. (((this pulls out a bunch of the water))) Squeeze the zucchini dry(((roll it up in a kitchen towel and twist both ends))).

2.In an iron skillet, heat the olive oil. Add the chopped shallots and season with salt and pepper. Cook over moderate heat until softened, about 3 minutes.

3.Add 1/4 cup of the wine/water and cook until evaporated, about 2 minutes.

4.Stir in the corn and 1/2 cup of water. Cover and cook until the corn is tender, about 4 minutes. Stir in the zucchini and cook until heated through about 2 minutes. Season with salt and pepper. Put it in a bowl, cover and keep warm.

5.In the same iron skillet combine 2 cups of the wine/water with the thyme, bay leaf, the halved shallot, and 2 cups of water and bring to a simmer.

6.Season the salmon with salt, add the fillets to the skillet, and cook at a bare simmer over low heat, turning once, about 6 minutes. (((You want the salmon's internal temp to be 119 degrees buy a meat thermometer))) Transfer the salmon to a plate and pat dry with paper towels. Discard the poaching liquid.

7.IF YOU ARE USING WINE: Put the remaining 1/2 cup of wine in the skillet and bring to a simmer. Whisk in the butter, 1 tablespoon at a time, until thoroughly incorporated after each piece of butter. This is called "Wine-butter sauce"

7.IF YOU ARE USING WATER: Put 2 tbsp of water in a small saucepan and bring it to a simmer (((even if you are going to make a bunch of this still only use 2 tbsp of water You can use as much as 2 lb's of butter with just 2 tbsp of water))). Whisk in the butter, 1 tablespoon at a time, until thoroughly incorporated after each piece of butter whisk, whisk, whisk. This is called "Beurre monte" or butter emulsified in water. Buerre monte, the workhorse sauce Food & Wine

8.Season with salt. Stir the basil into the vegetables and transfer to plates. Nestle the salmon into the vegetables, top with the butter sauce, and serve.

(((Here's a trick!! If your wine-butter sauce or your Beurre Monte breaks (oil separates, doesn't look creamy. Looks oily) put 2 tbsp of wine or water in a small saucepan and then slowly, about a tbsp. at a time whisk your broken sauce into the wine/water. This will re-emulsify your sauce back into the wine/water and it will be pretty and creamy again. You can do this over and over if it breaks again. If you keep your sauce warm, it won't break.. only warm, not hot..)))

Super simple, super elegant, super good If you like a little crust on your fish, buy a blow torch. Hold it up in the air when you first light it. Then torch it and brown all you want..5000 degrees just cooks the outside, inside stays perfect.

Giving Platelets is like giving blood, it just takes longer (1 1/2 hours) and you get all of your blood back (so you can do it every week if you want). I know it's a long trip to go all the way down to St Jude, but you may be saving a kid's life. plus you get to watch a movie while you're there. Call Kim at 901.595.2024 and she'll set up an appointment and treat you like family. Just tell her you're from Hope.

Directions: From Poplar, turn north on Third Street, then right on Lauderdale/Jackson Ave (first right after you go under the expressway). Enter through the north guard gate (you'll see the Danny Thomas Pavilion. Gold top).

Tell the guard at the gate that you are here to donate blood. The guard will instruct you where to park. You will then enter the hospital by the red side door closest to the blood donor parking lot. The Blood Donor Center is in the southwest corner of the hospital on the ground floor.

Appointment times are generally available Monday through Friday from 8:00am to 4:00pm. Except on Tuesdays, they start at 9:15am.
