Mack's Corner

This Week

The worst movie in the history of the world is "Kung Fu Hustle". It's right up there with "Bongo vs Godzilla 6", "Mr Green Jeans gets the big one", "Sideways", and "Karate Kid 15 - the wonder years"… the previews look kinda fun, but that 15 second preview was the best part of the movie … have you noticed that everybody is doing that now? .. If there's a new TV show that supposed to be funny, the one and only joke that is actually funny is in the preview, once you've seen the commercial you've seen the best they got, it's all downhill from there … I wonder if they have to pay extra for the one good joke … Anyway you need to get Kung Fu Hustle just so you can say you at least started to watch the worst movie ever made… I assume that it's an historic event and I know you wouldn't want to miss out on that … plus there's a part where people run like the Roadrunner where you can't see their legs moving because they are running so fast … there you go, something to look forward to … I had to turn it off after that….

My Air conditioner in my truck went out one time. The temp on my rear view mirror said 101 outside. The bad thing was that sometimes my AC worked. So I drove around with the windows open blowing hot air on me wishing that the AC would kick in and nothing really happened, I just got hotter. I would start to go get it fixed and  it would start working again, so I waited, and waited, and waited. I put a can of Freon in it but it didn't seem to help, plus the guy at Autozone told me that it would only take one and the little gage said the pressure was "Dangerously High"… of course it said that when it wasn't even attached to the AC valve .. so I could have stuck it in my ear and it would have still said "Dangerously High" …. I wonder what it would say if I held my breath with it stuck in my ear?? .. "Dangerously Stupid"????

God's like that: We know we need to talk to him, but we just keep putting it off. The best thing about God is that he's way better than the previews …

Kung Fu Hustle.. You know you want to see it …

Cooking 220 - 2 pans, 2 burners, 20 minutes:

Mediterranean Diet:

Ok so Australia is nowhere near the Mediterranean, but this is Easter and Lamb is very Mediterranean, very Greek… So if you make the blue cheese sauce or not, rack of lamb cooked like this is spectacular!!!!
This is from Tetsuya Wakuda . His cookbook is  "Tetsuya" .. Rack of Lamb (see below) and Miso and Blue Cheese sauce:

Miso and Blue Cheese sauce:

1 cup Chicken stock/ broth

100g (3 1/ 2 oz) white miso paste

15g (1/ 2 oz) Blue Cheese (Maytag Blue cheese works well)

1 tsp soy sauce

1 tsp mirin .. Fresh Market or a Wine store

1 tsp grated ginger

(Miso paste can be found in oriental groceries, maybe Whole Foods? You can buy it in a tub, it lasts forever. Looks like course peanut butter, but it tastes like soy. It's great for a quick stock for soup. Just stir it in to some hot water = instant stock …… Mirin is kind of a sweet sake, but it doesn't taste like sake. You can actually drink it if you want. Depending on which type you buy it may or may not have alcohol in it. I've found it at Fresh Market and at only one wine store.  I use all the time for soups, sauces, and vinaigrettes. It's just a good, different taste … )

Bring the chicken stock to a boil, then reduce to a simmer. Add the miso and stir until dissolved. Add the Blue Cheese and continue to stir until dissolved and sauce thickens. Add soy, mirin, and ginger stirring constantly. Remove from the heat. Strain through a fine mesh or leave it rustic… This is the greatest thing in the world on lamb…

Rack of Lamb:

1 rack of lamb (Charlie's meat market on Summer or Costco, if it's frozen… thaw completely)

Salt & pepper the lamb on all sides

Pre heat your oven to 200 degrees or if it won't go that low, set it as low as you can …

Add some oil to a hot pan (use a pan you can put in the oven. An Iron skillet works great) and sear the lamb on all sides.

Put it in the oven and roast for 30 - 40 minutes until internal temp is 140 degrees. Take it out and let it rest for 10 minutes … GET A MEAT THERMOMETER $1.50 at Kroger or get a fancy one at William's Sonoma .. 140 degrees is a big deal, never past 150!!

Usual rules apply: this is best when eaten straight from the pan while standing. Use the bone as a handle to dip in to the sauce. No reason to get any dishes dirty. The best flavor is against the bone…

This sauce also works great on steak….

How about saving a kid's life!!

When you give Platelets it's like giving St Jude $700 - $1000. If we don't give them, they have to buy them.

Giving Platelets is like giving blood, it just takes longer (1 1/2 hours) and you get all of your blood back (so you can do it every week if you want) . I know it's a long trip to go all the way down to St Jude, but you may be saving a kid's life . plus you get to watch a movie while you're there. Call Kim at 901.595.2024 and she'll setup an appointment and treat you like family. Just tell her you're from Hope.

Directions: From Poplar, turn north on Third Street, then right on Lauderdale/Jackson Ave (first right after you go under the expressway). Enter through the north guard gate (you'll see the Danny Thomas Pavilion. Gold top).

Tell the guard at the gate that you are here to donate blood. The guard will instruct you where to park. You will then enter the hospital by the red side door closest to the blood donor parking lot. The Blood Donor Center is in the southwest corner of the hospital on the ground floor.

Appointment times are generally available Monday through Friday from 8:00am to 4:00pm. Except on Tuesdays they start at 9:15am.

See you this weekend. Bring a friend. It's going to be great!!!
